diabetic valentine

ok so... i'm vegan and my boyfriend is diabetic. for valentine's day i want to make him a nice, portable dinner for a picnic that we both can eat. does anyone have any good sugar-free or low-sugar ideas for dinner and for dessert? or candies to go with the valentine? also, i want to make him a loaf of bread... any suggestions? would spelt work? i'm new to this whole diabetes thing, so i've got a lot of questions.

Is he a type 1 or type 2 diabetic? Does he take insulin? How closely does he watch his carbohydrates? Diabetics vary a lot in what they can/do eat, so I'd suggest asking him for more information before attempting to cook for him.

You can use agave or yacon to sweeten the dessert instead of sugar. They have low (agave) to no (yacon) impact on the glycemic index.

I am a type 1 diabetic (insulin dependent), and if he is as well, then he should be able to eat just about anything in moderation, just as long as he has enough insulin to compensate for the carbs. If not, then maybe some fruit? And of course, ask him, he should know the most about his own body.
