Chana masala

Served with whole wheat pita and soy yogurt!

Recipe...sorta. the chana masala spices were pre-mixed.

First part:
2 cloves garlic diced
1/2 onion diced
2 green chile peppers diced
1 tsp (or to taste) whole cloves ground
1 tsp (or to taste) whole peppercorns
1 tsp (or to taste) cinnamon
Sautee these ingredients in a pot with vegetable oil (olive, canola, whatever)

While that is sauteeing, chop up 3 plum tomatoes. Add when onions are soft. Let simmer together until tomatoes are mushy and broken up. (At least 15-20 minutes)

For a new twist, i threw a package of spinach leaves and some baby carrots into the blender with a LOT of Earth Balance and some olive oil.

After the tomatoes have broken down, add 2 cans of drained and rinsed chickpeas and the spinach mixture. Stir up with 3-5 spoonfuls of chana masala mix. (again, depending on how spicy you want it. You can let it sit for a few minutes to absorb the taste.)

I added some plain soy yogurt, maybe 4 spoonfuls. Eat with pita, naan, or whatever bread you have!
