CAKE!



Tomorrow after school one of my clubs is having a party (for february vacation, i guess)
I was told to bring something, so at first I thought cupcakes
Except the way the recipe was, it wouldn't be possible (after adding the vinegar I needed to bake is immediately)
Anyways, it's very delicious, and moderatly simple. Chocolate cake with peanut butter frosting.
Hopefully all the non-vegans at the party tomorrow will like it!



It was hard to find a cake & frosting recipe to use, because I had no corn starch, a limited amount of confectioner's sugar, and no sifter. Originally I wanted chocolate or vanilla frosting, but that wasn't possible with my limited supplies. both of these recipes are in the recipe index here, although I did change them a tiny bit.

Chocolate Cake
1 1/2 c flour
1/3 c cocoa powder
1 tsp baking soda
1/2 tsp salt
1 c sugar
1/2 c vegetable oil
1 c cold water (or ice coffee)
2 tsp vanilla extract
2 tsp vinegar
Preheat oven to 375. Use brownie pan (i used 13x9x2 sized) (no greasing required). Mix all dry ingredients in a bowl. Mix all wet ingredients in separate bowl EXCEPT VINEGAR (important!). Add wet ingredients to dry and stir until all dry ingredients are mixed. Pour batter in to the pan. Add vinegar to mixture in pan quickly and stir in--immediately put in oven and bake for 25 to 30 min. Cool and then consume!

Peanut Butter Frosting (thick!)

Mix:
1/3-1/2 cups creamy peanut butter
1/8 cup margarine (2 tbsp)
1/4 teaspoon vanilla
1 cup confectionery sugar

Then add soymilk until you get the consistency you want. I added maybe like 2 tsp at a time until I was satisfied. I probably should have added more, but whatever, I didn't want it to get screwed up.

I have a question though, since soymilk is in the frosting do you think it will taste "bad" tomorrow?
