Apricot Tofu 'Cheese'cake and Marinated Tofu Stir-Fry

Tonight was my first attempt at cooking with tofu, and I think I did a pretty good job :D I scored two 375g packs of organic tofu for $0.50c each last night, and I decided to cook an apricot tofu 'cheese'cake and use the left over tofu in a stir fry.

Apricot Tofu 'Cheese'cake

For the base:

  • 1 cup wholemeal flour

  • 1 cup dessicated coconut

  • 120g marge or oil (I used oil cos I didn't have enough Nuttelex)

  • 1 tsp cinnamon

For the filling:

  • 500g soft tofu

  • 1 cup of apricots and about half a cup of the juice (canned variety)

  • 1 or 2 tsp vanilla essence

  • 1 tbsp sugar

  • 1 or 2 tsp cinnamon

Mix all of the base ingredients together and press into a quiche dish. Then put all of the filling ingredients into a blender until they become smooth and creamy. Pour into the dish and stick in a 180.C oven for 45 minutes. When it's done, wait for it to cool before putting into the fridge for a few hours.

Marinated Tofu Stir-Fry

For the stir fry, I marinated tofu chunks overnight in a mix of soy sauce, garlic and sweet-chilli sauce. I tossed them into a wok with onion, capsicum and mushrooms with some of the marinade, then mixed through rice after about 10 minutes. Very quick and easy, tasted fab!
