2tablespoon powdered sugar (optional)
1 ½ cups brown sugar
1 ½ cups granulated sugar
3-4 tablespoons organic maple syrup
1 cup vanilla soy milk
1-2 cups pecans
2-3 teaspoons vanilla
Coat the sides of a heavy 3 quart pan with margarine. Combine the sugars, soy milk, and maple syrup. Heat over medium, stirring constantly until the sugars dissolve and the mixture boils. Cook to soft boil (234 degrees), this will take about 6 minutes. you can test to see if the mixture has reached this point without using a thermometer by putting a very small drop of the mixture into cool water and watching to see if it stays somewhat together rather than dissolving into the water. Cool for ten minutes. Add vanilla and pecans and beat rapidly until the mixture thickens then drop heaping tablespoons on wax paper, this must be done quickly because the mixture hardens fast. If it hardens before you can spoon it onto the wax paper, add a teaspoon or so of water and then scoop it out.
