yummmmmmy. I just had quinoa with sesame kale and ginger-sesame mock duck. And a side of butternut squash. The good smells actually woke my boyfriend up out of bed, hehe. (It was a surprise lunch.) It's an incredibly simple lunch, but full of good things and very yummy. I don't have pictures, because we ate it all before I thought about making pictures.
But here's how I made it:



Quinoa
I just make this stuff like I do brown rice in the steamer. About half and half water-quinoa, put the timer to 60 minutes. It's easy to tell when it's done. It becomes a little translucent and there is a white ring around the grain.

Sesame Kale
This is super easy. Take a tablespoon or so of toasted sesame oil, a little water, one finely chopped garlic clove and toss it in a saute pan.

Cut stems off of fresh kale, and put greens in pan once oil is heated up. Saute kale until wilted, add a dash of soy sauce if desired, then saute 2-3 minutes until tender.

Mock Duck
A little sesame oil, a choped up garlic clove and about a teaspoon of ginger paste in the pan. Heat, add mock duck, saute until browned.

Butternut Squash
Cut off ends, slice down middle, remove seeds. Then I oiled the halved with a bit of olive oil and set them in a casserole dish face down. Stuck it in the oven at 350 degrees F for about half an hour.


Throw it all together and you have a super tasty nutritious lunch!!!!!
