Breaded Tofu Nuggets

So tonight I took my very first step into the Wide World of Cooking and Eating Tofu. It's kind of amazing that in the nine years since I first gave up meat, I've never eaten tofu. It's always sort of scared me. I have texture issues with food, and tofu always seemed very wobbly and unappetizing. But I bought a block of firm tofu last week, determined to give it a go.

I combined two recipes that I found in the archives - one from the COK site posted by erica_the_vegan and one from a cookbook posted by joolee, and also threw in a few things of my own. I'll write it out at the end for anyone who's interested. I only made half a recipe, and it made way more than enough for just me. I ate them all anyway, though, with ziti, broccoli, marinara sauce, and garlic bread. Yum!

Breaded Tofu Nuggets

1 block firm or extra-firm tofu, frozen, thawed, drained, and cut into 1/2 in cubes
1/2 c. breadcrumbs
1 Tbsp. flour
1/2 tsp. garlic powder (I left this out because I didn't have any)
1/4 tsp. pepper
1/2 tsp. paprika
2 tsp. vegetable boullion powder, divided
salt to taste
1/2 c. warm water

Preheat oven to 350 degrees Farenheit.

Mix together the breadcrumbs, flour, spices, and 1 tsp. of the boullion powder. Mix the other tsp. of boullion powder into the warm water. Dip the tofu cubes into the broth, and then dredge in the breadcrumb mixture.

Bake on a lightly oiled baking sheet until crispy, about 30 to 35 minutes.

Eat and enjoy!
