Was digging about, looking for the easiest recipe for banana bread I could find in my cookbooks that didn't require prune puree or the like. Wanted simple, and while this does require egg replacer, it's all stuff that I keep on hand as staples (flour, sugar, baking soda, salt, oil, bananas, egg replacer).
One other note, I liked it with a little cinnamon and allspice sprinkled in at the end. Yum!
Simple Banana Bread
1-1/4 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegetable oil
2 very ripe bananas
Egg Replacer worth two whole eggs
Preheat oven to 350.
In a large mixing bowl, stir all the ingredients together, in order, until well blended.
Rub the insides of a loaf pan lightly with vegetable oil to prevent sticking.
Pour batter into loaf pan. Bake in 350 oven for 50-60 minutes, or until toothpick or knife inserted in center comes out clean.
Let sit for 5 minutes to cool, then pop out onto plate.
Slice and enjoy!
