Fancy, chocolate-dipped orange shortbread cookies

In need of a fancy, quick cookie I could make from what I had on hand and inspired by this recipe, I developed Fancy, chocolate-dipped orange shortbread cookies.

1/2 cup Earth Balance
Finely grated zest of one orange
1/3 cup granulated sugar
1/2 teaspoon vanilla extract
2-1/4 teaspoons cornstarch
1 cup flour
1/2 teaspoon baking powder

Preheat oven to 325˚. Beat margarine, orange zest, and sugar together until well combined. Add vanilla and cornstarch; beat until fluffy. Add half the flour and the baking soda and mix together. Then add the rest of flour (you might need a little more). Scoop out teaspoonfuls of dough, rounding them into thin ovals with another teaspoon. Gently transfer them to a cookie sheet. They hold their shape pretty well, so remeber that any gouges or lines will appear in the finished cookie--not necessarily a bad thing, but be prepared if uniformity is important. Bake for about 20 minutes, until lightly browned at the edges. Transfer to brown paper or a cooling rack until cool enough to handle. Meanwhile, melt about half a cup of dark chocolate. Lay out a sheet of parchment paper on a portable flat surface, such as a cutting board. Holding each cookie by one end, dip it carefully in the chocolate to coat most of it. Arrange on the parchment paper and chill until the chocolate is totally set.
