Christmas Pasta

One day last December, my boyfriend and I invented this pasta dish and named it "Christmas Pasta" because of the pretty red and green colors. For those of you who have been asking about a good dish to feed non-vegan friends and family, this is my favorite choice. I fed it to my super picky dad tonight and I suspect that he really enjoyed it (although he would never admit to it!) :)

Broccoli, asparagus, roma tomato, pine nuts, tons of garlic, chili flakes, and lots of olive oil.

It's super easy to make, and for everyone who has ever asked, "What can I feed my non-vegan friends?" - this is it. :) Just boil pasta and you might also want to boil or steam the veggies a little bit, too. Then sautee chili flakes and a ton of garlic (we used 6 cloves for three people) in a good amount of olive oil. Add some chopped tomato, pine nuts, salt, papper, and the veggies and cook until everything is delicious. Mix it all together with the pasta, adding more olive oil if it seems a little dry. You can use whatever green veggies you have around, and it would be just as good.
