swimming angel

swimming angel tofu, mmm, my favorite thai dish.

a restaurant on 45th street in Seattle has this.
i'm sure a lot of restaurants have it
but Savannah GA has noooo good thai restaurants

all measurements are approximate, i never take note while i'm making something.

you need
for fried tofu:
1 pkg extra firm tofu, NOT silken, cubed into 1 in. cubes
flour and cornstarch, equal amounts, probably 1/2 cup each (more if you need it)
a little bit of soymilk
1-2 inches veg oil in a skillet

for peanut sauce
1 cup peanut butter (if using fresh peanut butter add a little bit of sweetener)
1/2 cup coconut milk (or more)
a couple drops of sesame oil
soy sauce (a tablespoon maybe? more?)
1 clove garlic, crushed
1/4 yellow onion, chopped
1 tsp ginger powder

for the rest
wide rice noodles (1/2 box)
1 package frozen spinach, cooked and drained or 1 head of fresh spinach, slightly wilted
scallions (for garnish)

1. prepare the rice noodles according to the package. usually you pour boiling water over them and let them sit for 10 minutes.

2. deep fry the tofu. to do this, dip in soymilk, then in cornstarch/flour mixture, and then drop into the oil. this is the best combination i have ever used. cook until deep golden, transfer to plate with paper towel to absorb the oil.



3. make peanut sauce. quickly cook the garlic and onion and oil together, just for a moment, then add peanut butter and milk. whisk until smooth, add everything else. add more milk if its not smooth enough.

4. put everything together! noodles, spinach, peanut sauce, tofu, scallions. devour. not too fast though, its very rich.
