So with Purim coming up, anyone care to share their favorite vegan hamantaschen (and filling) recipes?

Here's one from The Jewish Vegetarian Year Cookbook

2/3 c shortening
1/2 c sugar
1/2 c mashed ripe banana (about 1 banana)
2-3 tbsp water
2.5-3 c flour

-Cream shortening and sugar, blend in banana til smooth
-Add water and vanilla
-Stir in flour gradually til thoroughly integrated and dough can be formed into a ball
-Wrap, chill 2 hours->overnight
-(Make hamantaschen)

Bake at 375 for 10-15 min

I like it, but I think the banana flavor is a bit too strong. I prefer the recipes that call for orange juice, but the ones I have also call for eggs. I guess I must have used egg-replacer, but I don't remember now. Anyone have any other recipes that don't call for eggs? I'm trying to expand my non-egg-replacer baking. :)
