For my chili, I used a scoop of the vegetarian chili mix from the Bulk Barn (it's basically a seasoned TVP), and added a bit of water, a can of corn, a drained & rinsed can of mixed beans, and a jar of home-made chunky tomato sauce (which has carrots, celery, mushrooms, and other lovely things in it).
I made the sauce pretty much according to the recipe, but added a pinch of nutmeg. I couldn't help it, it's the Welsh in me ;)
