Double Chocolate Zucchini Muffins, Roasted Chickpea recipes

Double chocolate zucchini muffins (recipe adapted from How It All Vegan)

1 1/2 cups flour
2 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
egg replacer equal to 1 egg (I used applesauce)
1/2 cup sugar
1/3 cup oil
1 tsp vinegar
1 1/2 tsp vanilla extract
1 1/2 cups zucchini, grated (about three zucchinis, peeled)
1/2 cup unsweetened cocoa powder
3/4 cup chocolate chips

Preheat oven to 350. In a large bowl, sift together the flour, baking powder, salt, cinnamon and cocoa powder. In a separate bowl, mix the the egg replacer, sugar, oil, vinegar, vanilla and zucchini. Mix the wet and dry mixtures until "just mixed." Spoon the batter into an oiled muffin tin and bake for 20-25 minutes, or until muffins are done.

Roasted chickpeas

1 big ol' can og Goya chickpeas, rinsed (28 oz, I think)
Olive oil
Garlic powder
Italian seasoning
Red pepper flakes
Salt and pepper

Preheat oven to 350. Line a cookie sheet with aluminum foil. In a bowl, mix chickpeas with a liberal "glug" (at least 2 tbs) of olive oil and season with spices, to taste. Spread evently onto cookie sheet and bake for 45-55 minutes, stirring every 15 minutes.
