I'd recommend using more yogurt (or cream or whatever) and less soy sauce.
preparation: 5 minutes
cooking: 10 minutes
4 slices wholegrain toast
1 Tbsp oil (recommended: avocado)
1 Tbsp lime juice
1 small onion, chopped
8 mushrooms, sliced
1 Tbsp soy sauce
2 Tbsp soy yogurt, cream, or mayo
1. Preheat the oven to 350 F. Place bread on a baking sheet, and bake for 5 minutes.
2. Heat the oil. Add lime and fry onions and mushrooms until soft. Add the soy sauce and yogurt, stir in.
3. Cut the toast into triangles and arrange in a star shape (??). Pour mushrooms on top. Garnish with parsley and lime slices if desired.
Both my mom and I found it quite good, but a little too soy saucey. I added probably 2-3 Tbsp more yogurt because it wasn't creamy enough for me. I think adding a few spices (dill maybe) would make this an even better dish. I couldn't make star toast, but it was still good.
