Purple (maroon) carrots!
Did you know that this is actually the original color of carrots? They didn't become all-orange until the 17th century, when the Dutch favored orange (the same color as their flag, and religion - Protestantism). The inside is somewhat shocking!
I coated the purple carrots, regular carrots, and sweet potatoes with some maple syrup, olive oil, salt and pepper and roasted them in the oven.
And I ate them with some leftover broccoli, green bean, and brown rice casserole.
To make maple-baked root veggies, just coat your peeled, chopped veggies with a drizzle of real maple syrup and a drizzle of olive oil, sprinkle liberally with salt and pepper, and roast in a 450-degree oven until the veggies are tender, turning them occassionally so they don't stick/burn.
