You will need:
-1 1/2 cups of all purpose flour
-1/2 teaspoon of salt
-1/2 teaspoon of baking powder
-1/2 teaspoon of baking soda
-1/2 teaspoon cinnamon
-1/2 teaspoon of ground cloves (it came from an old unlabeled container, so I hope they were cloves)
-1 cup of shelled hempseeds (storebought, not the ones with THC)
-1/2 cup of Smart Balance vegetable shortening
-1 cup of packed brown sugar
-EnerG for 2 eggs
-1 cup of uncooked quick oats
-2 cups of chopped red apples (as you can see in the picture, I didn't peel them. They still taste great, and the red makes them look more colorful. They're red delicious apples, but I guess there are better apples for baking?)
Stir together flour, salt, baking powder, baking soda, cinnamon, cloves, and hempseeds, then set aside. In a large bowl, beat the shortening and brown sugar until blended, then add in the egg replacer and beat until blended again. Add the flour mixture, then the oats, and then the chopped apples. Drop dough by teaspoons 2" apart on greased cookie sheets. Bake at 350 degrees for 12-15 minutes, or until lightly browned. Remove and cool on wire rack, then enjoy!
P.S. I made this recipe to use up my hempseeds. But I'm afraid the baking might have taken out all the good Omegas. So if all goes well, my next hempseed project will be a no-bake recipe.
