Shu-Cream Japanese Puffs recipe
1/4 cup butter
1/2 tsp sugar
2/5 cup water
1/2 cup flour
2 or 3 eggs
Pinch of salt
For custard cream filling: 1/3 cup flour / 2/5 cup sugar / 1 /1/4 cup milk / 3 egg yolks / 2 tbsps melted butter
Preheat the oven. Whisk eggs in a bowl. Put butter, sugar, salt, and water in a pan and put on low heat mixing well. Add flour in the melted butter mixture and stir quickly. Add eggs slowly in the mixture and mix well until soften.
Put the dough in a plastic bag to squeeze out as rounds. Make 8 rounds in a plat pan and place in the oven. Bake the dough in the 375 F oven for 15 minutes. When puffs expand, turn down the heat to 360 F and bake 15 more minutes. Make custard cream as follows. Mix flour and sugar in a bowl. Add warm milk in the bowl. Shift the mixture to a pan. Place the pan on low heat and stir the mixture. Add egg yolks in the pan and stir well. Heat for a minute. Stop the heat and add melted butter and stir well. Cut the puffs in half horizontally. Place custard cream in the middle.

Add flour in the egg and butter mixture and mix. Add chocolate chips in the bowl and mix together. Spread some batter and place baking wax paper inside of a medium loaf pan. Pour batter into the pan. Bake in preheated 360F oven for 35 minutes.
and if i can find green tea powder i will share my experience. when i went to japan in october i looved all the japanese sweet cakes and really all the food (i was/am mostly vegetarian, only leaning to veganism now..). There's a little store here that sells japanese, indian, thai food, the Asia Oriental store. it's run by this adorable little couple from japan as well.
If anyone else wants to try veganizing any japanese sweets (green tea ice cream, a myriad of other things!),
this is the page i got the recipes from. they're all pretty heavy on milk and creams and eggs but i'm up for a challange!
