Inspired in part by the Jerk Grilled Portobella -
I smeared a bit of olive oil in the bottom of a small casserole dish, and put in 1 portobella cap. Sprinkled it with cayenne, braggs, and cajun seasoning, and topped with 1 small chopped onion, chopped fresh parsley, and garlic powder. Then I threw in some baby carrots and chopped fresh spinach, and then threw some chopped red bell pepper over all of that. Drizzled it with olive oil, and stuck the whole shebang in the oven at 400 for 35 minutes.
While that cooked, I cooked the quinoa according to directions with some garlic powder, salt, and black pepper. It's the first time I've tried quinoa, and holy tofu it's nummiful! :D
