3 or so stalks celery and a few leaves
1 small onion, finely chopped
1 or 2 parsnips
2 small potatoes
quarter of a cup or so of chopped pumpkin
a sprig of parsley, chopped finely
about 1/2 cup of lentils
about 1/2 cup of soup grains mix
2 cubes vegatable stock
half teaspoon rosemary
tablespoon olive oil
8 cups water
Put lentils and soup grains in a bowl with water to soak.
Chop all vegies into bite-sized squares. Make pumkpin and potato squares a little larger so they don't crumble.
Put oil in large soup pan, add vegies on low heat. Stir and heat until vegies seem cooked and begin to stick to bottom. (about 15 min).Pic below
Then add lentils, grains, water, stock cubes & rosemary and salt to taste. Stir and leave on low heat with lid on for an hour. Stir occasionly. Take off heat and serve with a soup ladle! :)
