Lamingtons!

Yum! Took a bite to show u the inside (and cuz I can't stop eating them!)

First I used the sponge cake recipe (thanks reganelizabeth) from:
http://www.kfvs12.com/Global/story.asp?S=1593069
Here it is:
2 cups all purpose flour
1 cup sugar
3 teaspoons baking powder
1 teaspoon egg substitute
1 teaspoon vanilla
1/4 cup plus 2 Tablespoons salad oil
1 1/3 cups water
optional - 3 drops of food coloring (Make several recipes with different colors for rainbow cake.)

Mix first 4 ingredients into a mixing boil. Add vanilla and oil. Blend until all dry ingredients are moistened. Add the water and mix well. Pour into greased 9 inch pan. Bake at 375 degrees for 30 minutes or until toothpick inserted in center of cake comes out clean.

Make sure you put it in a square or rectangle tin

The Lamington Sauce:

What you need:

desiccated coconut
3 cups icing sugar
1/3 cup cocoa
1ž2 cup boiling water
4 to 5 drops of vanilla essence
What to do:

Cut the cake into strips lengthwise
Cut the strips of cake into pieces - you decide on piece size, 7 works well
Place some baking paper or alfoil down on your bench and cover in a thick layer of coconut
In a mixing bowl, sift icing sugar and cocoa, add water and vanilla essence again place this bowl in a bowl of boiling water and stir over heat until smooth
You need to keep the icing thin, if it becomes a little thicker than desired, just add a few more drops of water
Stick a piece of cake on the end of a fork and place in the icing. Allow icing to absorb into the cake for a seconds.
Remove and place on the sheet of coconut, use the fork or your hands to coat the piece of lamington
Place on a wire rack with some paper towel underneath to dry
