new york-style cheesecake!

man, is this recipe ever awesome. from "sinfully vegan", page 146.

1/2 c maple syrup
1/4 c canola oil
1 3/4 cup whole wheat flour
1/2 tsp vanilla

mix together a press into the bottom of a greased 9" springform pan. prick with fork and bake for 10 minutes at 375F.

4 8-ounce containers of vegan cream cheese like tofutti
1 12-oz box firm silken tofu
1 cup graunulated sweetener
1 tsp vanilla
1/3 white flour

mix very well until no lumps, pour into pan, place on top rack of 350F oven with a shallow pan of water beneath it. bake for 50 minutes.

1/2 box (6 oz) firm silken tofu
1 tbsp canola oil
1 tbsp lemon juice
1/4 tsp salt
3/4 cup granulated sweetener
1 tsp vanilla

process these ingredients until smooth in food processor. pour over cake and bake for an additional 10 minutes. turn oven off, but leave cake in it (unopened) for another hour.

remove cake from over, allow to cool completely. refrigerate at least 8 hours or overnight, enjoy. ;)
