1 3/4 cup flour
1 1/2 cup brown sugar
1 egg's worth of egg replacer
1 heaping tbsp. shortening
1 heaping tsp. baking soda
1 cup buttermilk
5 tbsps. unsweetened cocoa
1 tsp. vanilla
1/2 cup of hot coffee
Mix it all up and bake for 30 minutes in 350 degree
oven. Rectangular pans are best for keeping it moist.
Icing is a simple matter of 3 tbsps. of butter, a box
of powdered sugar, and a little bit of milk, if you
want a sugar-bomb silt layer.
I looked in the memories for a buttermilk replacement but only found two suggestions. Does anyone have a tried and true replacement, especially one they think might be good in this cake?
