before making anything with tofu, is it necessary to drain it out with some pressure like i see in a lot of recipes? i was not sure if it was required all of the time or just for certain textures. i have never made tofu before, and i would like to start.
edit: would someone suggest a good tofu recipe for me to make tomorrow? it will be my first time cooking with tofu. i have two packages of firm, good veggies (pea pods, carrots and the like), plenty of spices. should i just do a simple stir fry?
