Shepard's Pie

Makes 4 to 5 servings

4 or 5 medium potatoes, diced use 5 or 4 big potatos
2 Tbsp. margarine I used smart balance
1/4 cup soy milk or nondairy creamer
Salt and pepper, to taste
1 bag Worthington burger crumbles i used morningstar, i couldnt find anything else
1 can mushroom gravy watch out, most have beef or other meat in it, i found some finally at price chopper
1 small can mixed peas, corn, and carrots, drained
Salt, garlic powder, pepper, and cayenne, to taste

Boil the potatoes for 20 minutes, or until tender. Drain and mash with margarine and soy milk or nondairy creamer. Add salt and pepper, to taste.
In a medium bowl, mix the crumbles, mushroom gravy, peas, corn, carrots, and spices and pour into a pie pan.
Top the crumble mixture with the potatoes, spreading to the edges.
Bake in a 350°F oven for 30 to 40 minutes, until the potatoes are browned and the crumble mixture bubbles out the edges. From:http://www.vegcooking.com/recipeshow.asp?RequestID=709

Nachos

this is just what i used, mine was really really cheap and okay, but i wish i had some fak cheese or something to spice it up

1 can of black beans
1 can of refried beans
1 container of salsa (i used chili's)
1 bag of nachos

preheat the over to 350 degrees
on a large pan combine the black beans and refried beans. heat and mis until the refried beans suround and smother the navy beans.
fill a med sized baking pan with nachos
put your bean mixture onto of that and then the salsa
cook till when u see fit

(i dont know why but the nachos tasted awesoe today for lunch, when i had them for dinner last night)
