Penne Marinara with Sauteed Leeks and Spinach

I am obsessed with leeks. I love them. I think I've worked them into every dinner I've had for the last week. Tonight I was feeling like pasta, but also like leeks, of course... and maybe some spinach for nutritional bang... toss 'em all together and what do you get? This awesome pasta dish!

Penne Marinara with Sauteed Leeks and Spinach

Penne or other pasta of your choice
Thinly sliced leeks
Chopped spinach (I used frozen)
Marinara sauce (I used a decent bottled stuff)
Minced garlic
Dried basil, oregano, and parsley
Red pepper flakes
Salt and pepper to taste
Olive oil

Basically all of this is as much as you want/need. I made enough for just me, but it would be really simple to make a whole bunch of servings.

Boil your pasta. While that's cooking, heat up some olive oil in a pan. Throw in the leeks, then after a few minutes add the minced garlic and the spinach. Cook until the leeks are transparent and the spinach is sufficiently wilted. Spice it up with the basil, oregano, parsley, red pepper flakes, salt, and pepper.

Drain your pasta. If you need to warm up your sauce (I did), return the pasta to the pot and add the sauce. Heat on low for a minute or so. Transfer to a dish and top with the spinach and leeks. Add a slice of garlic bread (spread with freshly roasted garlic and smeared with Earth Balance, mmm!) and you're good to go.

See? Really easy. You guys don't need a recipe.
