This was my entry for the vegan_cookoff community cuz the ingredient this week is broccoli!
1 bowl cooked pasta
½ bunch broccoli floret, cooked
2 fresh basil leaves, chopped
1 ½ tablespoons vegan butter
½ cup vegan cream cheese
1 vegie stock cube, dissolved in a tablespoon hot water
salt n pepper to taste
In food processor or blender combine broccoli, basil, vegan butter, cream cheese and vegie stock. Puree.
Mix sauce into drained pasta, stir and cook over medium heat. Add salt n pepper and serve when heated through.
