And since that recipe is probably old news to most of you, here is my black bean dip recipe:
1 can black beans, rinsed
2T tomato paste
2-4T olive oil (or Chipotle Chili Oil, if you have some on hand!)
1 handful fresh cilantro, chopped
4 cloves garlic, crushed
In a large bowl, mash the beans with a fork. Add the tomato paste and olive oil and stir well. Toss in the cilantro and garlic and stir some more! Eat!
You can also make this dip in a blender, if you're in a hurry, but blenders tend to steal a good portion of the dip. Greedy blender!
This is great with fresh veggies, crackers or chips. It also makes a good sammich spread.
