Scalding soymilk?

I have been trying to convert many of my favorite baking recipes into vegan versions. Today for the first time I came across directions in my favorite bread recipe that told me to scald milk. I went ahead and scalded the soy milk I subbed for the dairy figuring it certainly couldn't hurt, but I was wondering out of curiosity if doing so actually made any difference other than changing its temperature? I know scalding dairy milk changes its protein structure, and I was wondering if the proteins in soy milk denature or change when heated?
