1 cup vegan sour cream
1 cup salsa of your choice
1 cup Morningstar Farms recipe crumblers, frozen
1 yellow bell pepper
1 orange bell pepper
Old El Paso fat free refried beans
Old El Paso enchilada sauce
vegan cheddar cheese (I used Veganrella)
Preheat oven to 350 degrees. Chop bell peppers into small chunks and toss them in a bowl. Add the sour cream, salsa, ane crumblers and mix them all together evenly. Lay out 6-7 tortillas. Spread some beans on the tortillas and scoop some of the mixture in a thick line down the center. Tightly roll the tortillas and put them in an aluminum foil-covered bakind dish, as many as you can fit. I managed to fit 7. Spoon some of the enchilada sauce over the top and grate your choice of vegan cheese over the top. Cover in tin foil and put in the over for about 30 minutes. Take the foil off of the top and bake for anoter 10ish minutes to ensure crispy tortillas and melted cheese. Then eat em up!
You'll most likely have a lot of the mixture left over, so just put it in a container and save it for later. Or just make less. I make a lot cause I'm a pig. Enjoy!
