2 recipes: Mango Salsa and Guacamole

Heya folks, I have been long absent from this community but am excitedly living with vegetarian and vegan roommates again and can't wait to cook up a storm!
Since summer is rolling in, I wanted to post my favourite lazy-day hot weather recipes. Dips and salsas are a staple of my summer diet.

This is a recipe I made up once off the top of my head and has been a hit at every potluck it's attended with me. Mangoes and cilantro were meant to go together.


Marvelous Mango Salsa

- 3 ripe Ataulfo mangoes (the smaller yellow variety)*, diced finely
- 1 large or 2 small bell peppers, diced finely - I use one small red and one small orange (more colourful)
- about 1/2 c. VERY finely chopped red onion
- fresh juice of one lime
- a large handful finely chopped cilantro

Mix all the ingredients in a medium sized bowl, adjusting amounts as you see fit - I generally allow a little more mango than pepper. Lots of lime juice and cilantro is key to this recipe.
Let the salsa sit for a few minutes at room temperature to allow the flavours to mix a little, and serve with corn chips! This makes a gloriously colourful appetizer - brilliant red, orange and yellow set off by flecks of green and purple.

*these are my favourite mangoes - the taste and texture is amazing, far superior to the big greenish ones! I didn't like mangoes at all until I tried Ataulfos.


And for the guacamole... a friend's grandmother asked me for my recipe, which I take as a sign of deep approval :) I'm usually raiding everyone's grandmothers!


Glorious Guacamole

Excuse the vague measurements - I never measure much of anything, just throw it all together and taste it until it tastes right!

Several ripe avacados, mashed with a fork
2-3 cloves garlic, crushed
a half a medium red pepper, FINELY chopped
finely chopped red onion, a little less than the pepper
a handful of finely chopped cilantro
juice of one to two limes
a diced hot pepper or two if you like

Mix all the above ingredients in a bowl and add the following spices to taste:
Cumin!! (really the secret ingredient - it gives it a kick, so be generous)
salt and pepper
hot chili sauce

Mix again, and let it sit for a few minutes at room temp for the flavours to blend. The garlic especially will come out after a few minutes. Serve with chips, burritoes, etc... and enjoy!
