A dessert!

Since I've mooched a ton off of everyone else in the community, I suppose it's time I post a recipe for y'all to try.

So, today, it's a vegan rhubarb crisp.


If you're like me and you like rhubarb and cinnamon-ey stuff, this is definetly tasty. ^^;

  • 1 cup light brown sugar, firmly packed
  • 1 cup all-purpose flour
  • 3/4 cup quick-cooking rolled oats (I use Quaker's...)
  • 1/2 cup melted soy bean margarine
  • 1 tsp. cinnamon
  • 4 cups sliced rhubarb
  • 1 cup granulated sugar
  • 2 tbsp. cornstarch
  • 1 cup water
  • 1 tsp. vanilla

Preheat oven to 350.

In a mixing bowl, combine the brown sugar, flour, oats, margarine, and cinnamon, and mix together until the mixture is crumbly. (I think the topping is so good. >_>; I could eat just that and be content.) Press half of the brown sugar/oat mixture into a greased 8-inch square baking dish, making a bottom crust of sorts. Top with the sliced rhubarb.
In a saucepan, combine sugar, cornstarch, water, and vanilla. Cook together until clear, then pour over the rhubarb. Top the rhubarb with the remaining brown sugar/oat mixture and bake for 45-55 minutes.
Tasty with vegan vanilla ice cream. n_n;
