banana nut bread cookies
1/4 c. soy margarine
2 really brown bananas (if you have 3, use them all, just compensate with slightly more flour)
1/2 c. brown sugar
1/2 c. turbinado
slightly more than 1/4 c. applesauce
1 1/2 c. flour (i used 1/4 c. whole wheat pastry flour and 1 and 1/4 c. unbleached white, but i bet they'd be fine with just unbleached white)
1/2 teaspoon salt
1/2 teaspoon soda
1 tablespoon baking powder
dashes of cinnamon and nutmeg (optional)
as many nuts as suits your tastes (i used about 3/4 c. pecans)
* the only drawback to these cookies was that they really wanted to stick to my non-stick cookie sheet, so i'm recommending baking them on wax paper.
preheat oven 350. in a mixing bowl, cream together margarine, bananas, sugars, and applesauce. leave as little banana lumpiness as possible. add dry ingredients. stir it around like crazy. batter will be wet, like cake batter. drop large spoonfuls onto a cookie sheet covered with wax paper. bake for approximately 11 minutes. the bottoms should be nice and brown, bordering on dark brown. cool on wire rack. enjoy with your favorite soymilk!
