(i halved the recipe, here's the original one)
• 3/4 c. dry sweetener
• 1 cup margarine (softened)
• egg replacer, equal to one egg (1 tbs. cornstarch, 1/2 tsp. baking powder, 1/4 tsp. baking soda + 1/4 c. water works well in ALL baked goods, per one egg)
• 1 tsp. vanilla extract
• 1/2 tsp. salt
• 2 1/4 c. flour (i used whole wheat... all-purpose white flour be damned! ;) )
• 1/4 tsp. baking soda
preheat oven to 375. in a bowl, stir together margarine, sweetener, egg replacer, and vanilla. stir in the salt, flour, and baking soda, and mix well. divide dough in half and roll each half on a lightly floured surface. (the amount of margarine will tend to make it stick, so be careful.) cut into shapes with a cookie cutter and bake for 8-10 minutes.
(these amounts per each color. if you only want one color, use one.)
•1/2 c. powdered/icing sugar
•1/4 tsp. vanilla
•2-3 tbs. water
•1/8 to 1/4 tsp. liquid food coloring
mix all well in a small bowl. works best to apply to cookies when mostly cooled. this frosting will harden if it sits on the cookies for a while.
