Roasted Cauliflower Mash

Probably not new to you, but a revelation to me:

1 head cauliflower
Several cloves garlic, to taste
Olive oil
Salt & pepper to taste
Soymilk
Margarine

* Heat oven to 350-400F
* Wash cauliflower & cut into florets
* Peel garlic and chop cloves in half
* Place in bowl
* Add salt and pepper, and pour just enough oil over to form a light coating when cauliflower and garlic are tossed
* Place cauliflower and garlic in skillet/roasting pan in oven; be sure to pour off any excess oil
* Roast 45 minutes to 1 hour, stirring carefully after 30 minutes to ensure even cooking
* Remove from oven and mash with margarine and soymilk
