It was very tasty and I am mostly pleased with how it turned out. I would like to know if anyone can offer up some ideas on how to thicken it a bit (give it that spongy egg-like texture). Maybe some silken tofu?
Here's the recipe of sorts I used:
3 1/3 tablespoon egg replacer
1/2 cup rice milk
about 1/3 cup grated potato
1/2 cup grated Follow Your Heart mozzarella
1 slice Tofutti cheddar, torn
1/3 or so small red onion, chopped
two heaping dashes of basil
1 heaping dash of black pepper
1 8" pie shell
Pre-heat the oven to 350. Mix the egg replacer with the rice milk until completely blended (about two minutes). Pour over other ingredients in the pie shell and mix well. Bake for 30 minutes.
