seitan curry

last night i made my first ever curry, based heavily around a recipe from How it all Vegan!









ingredients:

1 large onion, sliced
6 cloves garlic, minced
3 tbsp olive oil
1 medium potato
lots of straw mushrooms
lots of peas
1 tbsp curry powder
1/2 tsp cumin
1/2 tsp turmeric
a few pinches of cayenne pepper
1 & 1/2 cups coconut milk
some seitan, cubed

cooking instructions:

in a large saucepan, saute the onions & garlic in olive oil on medium heat until onions are clear. add the potatoes, seitan, peas, mushrooms & all of the spices. (i needed a little extra olive oil here too, to keep all of the spices from sticking to the bottom of the saucepan). cook for about five minutes and then add the coconut milk. lower the heat, cover and let simmer for about twenty-five minutes.

it ended up that the potatoes took a really long time to cook soft, even after the curry had thickened, so next go around i'll probably boil them a bit before adding them into the pan.

i ate mine over basmati rice & my mom ate her's over noodles.
