various grill recipes

I'm cooking up a feast tomorrow!



Citrus/Citric Acid Tempeh

juice of 1/2 grapefruit
juice of 1/2 lime
2 tbsp tamari
1/3 cup water
pinch cayenne
2 tbsp safflower/sunflower/canola oil

1 package tempeh, thickly sliced

Combine first set of ingredients for marinade, marinate tempeh overnight. Heat grill, grill for about 10 minutes per side.


Portabello Slices

2 tbsp balsamic vinegar
2 tbsp tamari
1/3 cup water
freshly ground black pepper to taste
1 clove garlic, minced
1 - 2 tbsp extra virgin olive oil

2 portabella caps, de-stemmed, wiped clean, and thickly sliced

*refer to tempeh directions, although these cook faster than the tempeh


Lentil Burgers

1 cup cooked lentils, mashed
1/2 cup wholegrain breadcrumbs
1/2 cup rolled oats
2 tbsp cornstarch
1 tbsp water
1 tbsp extra virgin olive oil
1/2 onion, diced + 1 clove garlic, minced, sauteed until soft
1 tbsp cumin
1 tbsp tamari
1 tbsp nutritional yeast
pinch cayenne or chipotle powder
black pepper and salt to taste

Combine all ingredients, adding either more breadcrumbs or more water if too wet or too dry. Refrigerate for at least an hour. Heat grill and grill for 5 - 10 minutes per side.


Asparagus

2 tbsp extra virgin olive oil
2 tbsp fresh lemon juice

1 bunch asparagus, washed and woody part of stems removed

salt and pepper to taste

Combine lemon juice and oil; brush asparagus with mixture. Heat grill and grill until tender. (I've not made this yet, so I don't know cooking time.)


Eggplant (from here)

1 large eggplant
3 Tbsp extra virgin olive oil
3 Tbsp balsamic vinegar
2 cloves garlic, minced
1/4 tsp salt
Freshly grated black pepper


Preheat a gas grill to high or build a fire in a kettle grill.

Slice eggplant 1/3- to 1/2-inch (0.75 to 1.25cm) thick. In a small bowl, mix together the olive oil, balsamic vinegar, garlic, salt, and pepper. Brush both sides of the eggplant slices with the mixture.

Place eggplant on the preheated grill. If you wish to have nice grill lines, turn only once on each side. Grill eggplant slices 10 to 14 minutes.



We're also having artichokes steamed with garlic cloves and olive oil and nutritional yeast inside. Also, I'm going to try vgnwtch's peppered pineapple suggestion on the grill. I can't wait!
