amazing vegan cookies!

i posted yesterday about peanut butter because i wanted to make these cookies with natural peanut butter. anyway if you are looking for a good cookie recipe, you must must must make these cookies! they are so tasty. =D i'm so happy to find a good vegan baking recipe (i'm vegetarian, experimenting with veganism..)

vegan cookies of superawesomeness (draggingmyheels's recipe)

2 1/4 cups unbleached flour
2 cups firmly packed brown sugar
1 tsp baking soda
1/2 tsp salt
1 cup vegan margerine or vegetable shortening (shortening makes them more soft & chewy, marg tends to make them more crunchy & hard)
3 tsp vanilla (this is a lot, i know, but i love vanilla)
1 ripe banana, mashed
2 cups quick-cooking rolled oats
1 cup chocolate chips (make sure there's no dairy in them!)
1 cup crunchy peanut butter (you can use smooth too)

grab a really big bowl & mix up the flour, brown sugar, baking soda and salt.

add in the margerine/shortening, vanilla, and the mashed up banana. mix again! this gives you your basic cookie dough.

throw in the oats, chocolate chips & peanut butter & mix until JUST blended. if you mix it too much, your cookies will be all hard & tough. at this point you could throw in chopped nuts & coconut too, really whatever you want!

roll those fuckers up in little balls & put on a greased cookie sheet. bake at 350F for like 15-17 minutes. i guess this depends on your oven.

let them cool a minute before you take them off the cookie sheet, or the cookies may fall apart. makes an assload of delicious cookies!


i forgot to add the peanut butter (haha yes after i made the peanut butter post.. :p) and so i ended up with 4 kinds of cookies.

1. vegan chocolate chips & oats
2. vegan chocolate chips & oats with sweetened coconut sprinkled on top
3. vegan chocolate chips & oats & peanut butter
4. vegan chocolate chips & oats & peanut butter & sweetened coconut

my favourite were #2. next time i think i'll use only a bit of oats, LOTS of coconut, and chocolate chips. the awesome thing about this recipe is you can just add whatever you want and (i'm sure) it'll be delicious. =D

if you don't add the peanut butter, the dough will seem super crumbly, but trust me, it should still roll up into a bowl and cook into a delicious non-crumbly cookie. =D
