Okara Flax Seed Granola

I made soymilk this morning; as always, it's never up to my expectations (which are tainted from 8 years of drinking Vitasoy) but I love having okara to play with...

Preheat oven to 350 degrees.

2.5 cups okara
0.5 cups flax seed, ground coarsely in a coffee grinder
1 cup barley flakes
2 tbsp olive oil
3 tbsp liquid sweetener (I used a mix of maple syrup and barley malt)
0.25 tsp salt

Mix well in a lasagne pan, and roast for about an hour, until most of the moisture is gone and it is a nice golden-brown colour. Once it's done, take it out and add anything else you like (dried fruits, nuts, etc.).

Goes great with the homemade soymilk. :)
