Liquor Cake

I just tried this recipe for Kahlua Cake that someone posted on one of the vegan boards a few weeks ago. (I am sorry, I don't remember who posted or on what board!)

Kahlua Cake

1 vanilla vegan cake mix
1 box chocolate pudding mix
1 cup oil
3/4 C. water
1/2 C. sugar
1/4 C. vodka
1/4 C/ Kahlua
4 eggs worth of egg replacer (original poster suggested using 2 Ener-G eggs and 2 silken tofu eggs)

2/3 C. powdered sugar
1/3 C. Kahlua

Mix all together, pour into a greased, floured bundt pan. Bake at 350 for an hour. Let stand 20 minutes, loosen from pan, and cool another 20 minutes.

Poke holes all over cake (not all the way down) and pour over the glaze.

I used caramel liquer instead of Kahlua and caramel vodka instead of plain. I would use all liquer next time, as I don't think the vodka really contributed anything to the final product and the extra richness would be good. I also decreased the oil to about 3/4 cup, but I think you could get away with even less. I used a 13 X 9 pan instead of a bundt pan.

The carnivores I fed this to absolutely loved it! : )
