I wanted to veganize this recipe my mom makes. I'm quite impressed with myself. It's just as good as anything I've seen in a restaurant and almost too pretty to eat!
EDIT: this recipe has been reworked since first posted. the base didn't turn soft and it's tastes more "cheesy" with the vegan gourmet mozzarella.
1 cup flour
1/2 cup margarine
1/3 cup sugar
1/4 tsp. vanilla
8oz. extra firm silken tofu (I use mori-nu)
1 tbsp. fresh lemon juice
1/2 cup sugar
1/3 cup melted vegan gourmet mozzarella
1/2 tsp. vanilla
4-5 apples. I use macintosh
1. Cream margarine, sugar and vanilla. Add flour. Work through with hands until the mixture is firm enough to hold shape and not crumbly. Pat down in a greased 9" springform pan. Make sure you have patted some of the dough around the side of pan. Bake for 5-7 minutes on 300F to firm.
2. In blender, combine tofu, sugar, lemon juice, vanilla and melted vegan gourmet mozzarella. Pour mixture into base.
3. Slice peeled apples and coat with cinnamon and sugar. Place on the top in a spiral. Sprinkle slivered almonds on top.
4. Bake at 450F for about 10 minutes. Reduce heat to 400F and bake for 20 minutes. remove and loosen torte from the rim of pan with a knife. let cool completely before removing rim.
I might use it to make a cheezecake sometime since we don't get products like better than cream cheese here. I wouldn't spread it on a bagel or anything though. oh, and if using sweet apples you can use a little less sweetener on them..I found the top a little too sweet because of that. not that I'm complaining or anything. :)
