Spinach and Strawberry Salad
1 bag or head of spinach, washed well
Strawberries to taste (I used about half a pint, rinsed well and slice, tops removed)
black pepper (fresh ground is best, IMHO)
In a skillet, heat olive oil and black pepper. Add spinach and saute for about five minutes, until the leaves wilt slightly. Scoop the spinach into a bowl and add strawberries and toss well. Add pepper to taste. The olive oil can be used as a dressing later if you wish.
