I know a few people are interested in a Vegan cooking school.

Sessions will include information, demonstrations and hands-on training regarding but not limited to the following subjects:
~~Healthful Oils: choosing the best organic oils to cook with as well as use as condiments; sample tastings
~~Alternative Sweeteners: choosing the best sweeteners to use based on application of vegan dish; sample tastings
~~Spices & Seasonings: sourcing and being familiar with the variety of spices and seasonings available; applications for usage
~~Appealing Appetizers; Sensational Soups; Enticing Entrees
~~Sauces, condiments, salads, salad dressings
~~Baking segment includes breads, rustic and fancy desserts
~~Intuitive and Seasonal Cooking: learn how to be spontaneous with what you have available in the kitchen and how best to work with seasonal, local and regional produce
~~Knives: knife selection, usage and sharpening demonstration and teaching throughout program. Knife Skills development is a feature of the daily hands-on program and will be monitored by the chef for
further instruction and feedback if necessary.
~~Menu Planning: learn what is the best way to menu plan for yourself, your business and family
~~Recipe Development: learn what goes into creating great recipes
~~Organic/Vegan Resources: Suggested Books, Videos, DVDs, Publications, Websites for you and your clients.

I did a 12 day program 2 years ago and it was fantastic. They are really great people and you get to meet new great people too! I am hoping to attend the 6 day course. They can answer all your questions, don't be shy!
