yams and kale

1 yam, diced
1 bunch kale, chopped
1 onion, chopped
1-3 cloves garlic, minced
olive oil
tamari
sesame oil
brown sugar
water

Heat the olive oil in a big pan, fry up the onion and garlic until they start to soften. Add yams and kale. The yams will take longer to cook than the kale, and if you want to be anal you could add them first and cook them a bit and then add the kale, but I think kale is one of the few vegetables that benefits from being slightly overcooked, and if you dice the yam small enough (half inch or so) it should be fine. Cook with tamari, sesame oil, and brown sugar (I didn't measure anything, but in the 1-2 tablespoon range each) and a little water if things start to look crisp. Make sure you use a pan with a nice top so that the veggies can steam a bit. Cook until done. Would probably serve two, especially if there's some bread or rice to go with it, but today it served one hungry girl who skipped breakfast and is getting ready to go to work.
