simplified manicotti/canneloni/whatever you prefer

i simplified kejlina's recipe for Canneloni / manicotti / stuffed tubes of pasta joy and i think it's safe to say it now doesn't in any way resemble the traditional dish, but it was so good i had to share. if you want it pretty, pick her recipe, if you're lazy use this. just a little bit of advice there before we start.

i cooked 3 cups of elbow macaroni, which was what i had (that is, it was 3 cups uncooked and god knows how many once it was done). i put a layer of regular, traditional pasta sauce (target brand actually), about half a can, on the bottom of a casserole dish. on top of this i put the pasta, topped it with my little tofu mix and then with the other half of the pasta sauce and then a simpler version of kejlina's white creamy sauce.

ingredients for the tofu mix:
1/2 onion, diced
2-3 cloves garlic, minced
1 tub tofu, crumbled
oregano, basil, parsley, red pepper flakes, salt and pepper to taste

directions for the tofu mix:
saute the onion in oil in a pan. after a few minutes add the garlic. after another couple of minutes throw in the tofu and cook for a little bit. add spices until it tastes yummy and let it cook until most of the liquid is absorbed. put it in the dish with the rest of the stuff, because the white sauce has to be poured right on without sitting, so everything has to be done before you start making it.

ingredients for the white sauce stuff:
2 tbsps oil
2 tbsps flour
1 cup soy milk
some salt and pepper
1 tbsp nutritional yeast
some vegan parmesan cheese (sorry, measurements isn't really my thing)
a pinch of nutmeg

directions for the sauce stuff:
pour the oil in the pan (i used vegetable because i was out of olive oil, but that would probably be even better). when it starts heating up, add the flour. stir constantly. after a couple of minutes add the soy milk and spices. keep stirring as it cooks. once it starts to thicken and looks creamy and yummy pour it on top of the dish.

that's it. put it in the oven (350 degrees) for 10-15 minutes. eat and say YUUUUUM.
