Peanut Butter Chocolate Chip Raisin Cookies

Adapted from The Grit Cookbook

1/4 (half a stick) margarine, melted
1/2 cup brown sugar
1/4 cup sugar
splash of vanilla
1/2 TBS water (plus extra later on if needed)
3/4 tsp cornstarch
3/4 cup flour, plus a little extra, maybe a TBS (you made need more later depending on the amount of peanut butter you use)
3/4 tsp baking soda
4 big TBS peanut butter, plus extra to taste
chocolate chips, raisins

Preheat oven to 375
Cream margarine and sugars until combined.
Add vanilla, water and cornstarch. Blend until combined.
Add flour and baking soda and combine.
Add peanut butter. Add more flour and water until right consistency is achieved. This will vary depending on how much peanut butter you choose to use (more PB, use more flour and water).
Add in chocolate chips and raisins, however much you like.
Roll into balls and flatten with your hand or bottom of a glass.
Bake for 10-13 minutes.
Makes 12 large cookies.

These would also be really good with coconut, but I'd use a little less PB and make them into small cookies. Coconut cookies seem better off small, to me.
They're crispy on the edges and soft in the middle. I wouldn't eat them until they're fully cooled, though, because one kind of dissolved in my mouth fresh out of the oven.
