I *thought* we had nothing for dinner...

Last night I was feeling tired and uninspired to cook, my fiancé was exhausted and hungry, and we were ten seconds from ordering a pizza when I remembered the corn and zucchini in the fridge. I figured I could find *something* to make, even if we just had vegetables and rice. But what I pulled out of our fridge and cabinets was something I liked enough to share, and enough to make again!



Mexican-Inspired Quinoa Dish (if you have a more exciting idea for what to call this, let me know!)

1 c or so quinoa (I didn't measure, just used what we had)

1 Tbsp olive oil
1-2 tsp cumin seeds (I would've used ground cumin if I could have found it)
1 zucchini, chopped
1/2 poblano pepper, chopped (kind of a weird leftover, I know :))
1 ear corn, kernels sliced off (I'm sure frozen corn would work, too)
1 clove garlic, minced
2 Tbsp salsa (not accurate, I used the rest of the jar)
about 1/2 can black beans (again, using up leftovers)
a few squirts lime juice

2 Tbsp. fresh cilantro, chopped
half an avocado

Cook the quinoa (I think it's 1.5 c water to 1 c quinoa). Meanwhile, heat the oil, then add the cumin seeds. Cook until they start to smell really good. Add the zucchini, garlic, and poblano pepper and cook until just tender. Add the corn, beans, salsa, lime juice, and salt to taste, and cook just until heated through. Serve over quinoa with cilantro and avocado as garnish.
