Cinnamon Banana Pancakes
(amounts are approximate and flexible)
1 cup unbleached white flour
1/2 Tbsp baking powder
Big dash cinnamon
1 1/3 cup soy milk
1 banana, mashed
2 Tbsp oil
2 tsp vanilla
Smoosh all ingredients together 'til a thick, relatively smooth batter.
Heat your non stick skillet on low. Ladle batter into pan in desired amounts. When pancake is bubbly on top and almost dry, flip and cook for 5 more minutes or until middle is cooked through. (Might take longer than you think)
Top with syrup/sauce of choice and serve.
On the denser side as far as pancakes go.
Blackberry-Mandarin Orange Sauce
1/2 cup Blackberries, smooshed
1 small can Mandarin Oranges, with liquid, smooshed
1/4 to 1/2 cup sugar, depending on your personal tastes
1/4 cup water
1 1/2 Tbsp cornstarch
Mix cornstarch in water to avoid lumps. Combine with all ingredients in small saucepan and whisk on low heat until thickened.
Makes a ton more than you'll need for the pancakes. (about 2 cups maybe?) I refrigerated the rest of mine for some sort of future dessert. I'll share if it works out!
