Delicious White Cake.
1 1/2 cups flour
1 cup dry sweetener/ vegan sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 cup water or soymilk (i used almond milk)
1/3 cup applesauce
1 tablespoon nice, mild tasting vinegar
1 tablespoon vanilla
1/4 teaspoon almond extract
Preheat oven to 350 degrees F.
Mix or sift dry ingredients together in a large bowl. Measure in the wet ingredients, and stir with a fork until no lumps remain. (stir in vinegar at the end, right before putting in oven)
Grease or flour pan. Pour into an 8" x 8" pan.
Bake for 35 minutes or until tests done.
I made it into a layer cake and used mashed raspberries with a teeny bit of sugar for the filling in between the two layers.
Chocolate Ganache Frosting.
2 cups semi sweet choc chips (i used Ghirardelli’s)
6 tablespoons vegan margarine (i used earth balance)
3/4 cup soy creamer or soy milk (i used almond milk)
In a sauce pan over medium heat, bring soy creamer to a low boil. Add margarine and melt, turn off the heat and stir in chocolate chips until smooth. Let cool then cover and refriertate for at least 2 hours. When ready to use give it a quick mix with a strong fork until it is a spreadable consistency. This frosting is good for using with a decorating bag, if you're not using one you will have some left over but who can complain about that?
